Recipe: Crunchy Mayo Free Cole Slaw

coleslaw-creamy-cumin-lime-dill-vinaigrette-ftrThis makes for a delicious crunchy accompaniment to your meal in place of grains or starches. I like this with fish, beef, chicken- just about anything!

2 bags shredded cabbage (about 1 whole cabbage)

2-3 shredded carrots

1 medium size red bell pepper julienned

1 red onion thinly sliced/chopped

Put all of the ingredients in to a large metal/ceramic bowl



½ cup cilantro chopped (packed)

½ tsp ground cumin

1/3 c fresh squeezed lime juice

½ c olive oil

a few dashes of Tabasco or your favorite hot sauce

a few splashes of whole fat coconut milk or box coconut milk to smooth the tartness of the lime

Himalayan sea salt to taste

Freshly ground pepper to taste

Throw all dressing ingredients into a blender and blend until smooth

Pour dressing over slaw, mix well with tongs
